1. Puttu and Kadala Curry

Material for Puttu:

  • Puttu Mavu (rice flour) – 2 cups
  • Salt
  • Hot water
  • Coconut (pumpkin grated)

How to make Puttu

Add a sufficient amount of hot water and salt to the rice flour. Mix the mixture well with the fingers. To make puttu you can use a traditional pot called puttu kudam. Start the process by adding a spoonful of grated coconut in a cylindrical vessel and after that add well-mixed rice flour. When you add rice flour to the pot, you can add a small amount of grated coconut along with it. Keep in mind that the cylindrical vessel is completely filled and now you cover the top of the cylindrical vessel and place it on the puttu kudam. Now allow the ingredients to cook with steam.

Your putt will be ready in three minutes. Served with kadla curry is a great combination.

Material for Kadala:

  • Chana (black gram or Bengal gram) – 1 cup
  • Onion (chopped) – 1 cup
  • Coconut (grated) – 1 cup
  • Coriander Powder – 2 tsp
  • Chili Powder – 1 teaspoon
  • Turmeric powder – ½ teaspoon
  • Garam Masala – ½ teaspoon
  • Coconut (cut into square pieces) – 4 cups
  • Tomatoes (chopped) – 4 cups
  • Curry leaf
  • Coriander leaves
  • Salt
  • oil
  • Mustard seeds
  • Red chilly
  • Ginger-Garlic Paste

How to make Kadala

First, let the gram (black gram or Bengal gram) be soaked in water with salt for ten hours. Then cook it well and keep it aside.

Heat a spoon of oil in the pan. Add grated coconut to it and fry till it turns brown. Then add coriander powder, chili powder, and garam masala. Stir until all the ingredients are brown. Make a paste of these and separate them.

Heat a little coconut oil in a pan. Add some red chilies and mustard seeds to it. When they crackle, add coconut pieces to it. Run a little. Then add ginger-garlic paste followed by onion and tomato. Add some curry leaves and stir lightly. Now add gram to this mixture. Add enough water and salt. Run well
Now add a separate coconut paste mixed in it. Allow the curry to cook well.

Now decorate the curry with chopped coriander leaves and serve it with Puttu. This proves to be a great flavor combination.

Appam

Appam is similar to the South Indian Recipe “Dhosa” but quite different, and you also feel the difference of taste while having it in a meal, dinner, or lunch.

  • 200 grams semolina
  • 200 grams curd
  • 2 onions (finely chopped)
  • 1 Tomato (finely chopped)
  • 3 tablespoons coriander leaves,
  • 2 chilies (finely chopped)
  • 1 teaspoon mustard
  • 4 tablespoons oil
  • 2 tablespoons lemon juice

How to prepare Appam

To make semolina appa, take semolina in a vessel, add curd onions, tomatoes, curry coriander leaves, chili, and mix it well.

Now add a little water and dilute the mixture, do not add more water, the mixture should be thick. Now add salt and lemon juice as per taste. After adding everything, mix the mixture well.

Now leave your material for 10 to 15 minutes so that everything will flower well

Now place the appam mold on medium flame and add some oil. Now add a pinch of mustard seeds to the oil. When the mustard starts to crackle, pour semolina mixture into it with a spoon and duck it with a plate.

When the appam swells, put the knife in the appam and see if the appam is cooked inside or not, if the knife comes out clean then it is appam. Now flip the appam with the help of a knife and bake the other side too. When appam is done, take it out on a plate with a spoon.
