Kerala Style Mango Pickle

This is instant Kerala-style mango pickle its a tangy recipe made using raw mangoes and spices 

Ingredients

(1) 500 grams of raw mango (2) 2 teaspoons of salt (3) 4 tablespoons of sesame oil (4) 1 teaspoon mustard seed (5) 1 teaspoon fenugreek seed (6) ¼ teaspoon asafoetida

(7) 8-10 Cloves whole peeled garlic clove (8) 15-20 curry leaves (9) 1 teaspoon turmeric powder (10) 3 tablespoons Kashmiri red chili powder (11) 2 teaspoons of white vinegar

 Wash the raw mangoes and wipe them well with a kitchen towel. Cut the flesh into 1-inch cubes with skin on.

Add 2 teaspoons of salt to the mangoes.  (If you don't like salt much then you can also add salt according to your needs)

Mix well and keep aside for 30 minutes. It will take some to set completely. So you need to wait for 30 minutes minimum.

Heat 4 tablespoon sesame oil in a pan. Once the oil is hot, add 1 teaspoon mustard seeds and 1 teaspoon fenugreek seeds and fry on medium heat for a few seconds.

Add ¼ teaspoon asafoetida, 8-10 whole peeled garlic cloves, and 15-20 curry leaves and fry for 4-5 seconds.

 Add 1 teaspoon turmeric powder, 3 tablespoon Kashmiri red chili powder, and 2 teaspoon white vinegar and fry for another 3-4 seconds.

Now add the mangoes and mix well. You need to mix it properly to spread spices on all parts of the mangoes.

Now It's Ready

Remove the pan from heat. Cool the pickle and transfer it to a sterilized container. The pickle is ready to serve.
