Kadai Chicken

Kadai Chicken is a delicious Indian chicken curry where chicken is cooked with freshly ground spices.

TO ROAST AND GRIND

3 tablespoon Ghee 2 tablespoon Vegetable Oil 2 Black cardamom 1 inch Cinnamon 2 Bay Leaves

FOR THE GRAVY

1 cup Onion Chopped 1 inch Ginger Juliennes 2 teaspoon Garlic Chopped 1 cup Tomato Grated 4-5 Green Chilli Slit into half Salt to taste ¼ cup Yogurt Whisked with 1 teaspoon of all-purpose flour

½ cup Capsicum Cubed ½ cup Onion Cubed and separated ½ teaspoon Turmeric Powder ½ teaspoon Garam Masala ¼ cup Fresh Cream 1 tablespoon Kasuri Methi

Mix chicken with ginger garlic paste, Kashmiri red chili powder, salt, and lemon juice in a bowl. Cover the bowl and let the chicken marinate for 30 minutes.

Dry roast coriander seeds, cumin seeds, fennel seeds, black peppercorn, and dry red chilies on medium-low heat until they are browned and fragrant.

Once when the spices come cool down then you need to grind the roasted spices to make a powder.

Heat ghee and vegetable oil in a pan. Once the oil is hot, add black cardamom, cinnamon, and bay leaves and let them crackle for a few seconds.

Once when black cardamom, cinnamon, and bay leaves start to crackle then you need to add onion and fry until it turns light brown.

When onion turns light brown you need to add ginger, garlic, tomato, and green chili and cook for 3-4 minutes.

Now you need to add the marinated chicken and the ground masala and cook on high heat for 5-6 minutes.

Add yogurt whisked with maida and Add ½ cup of water and salt to taste and cover the pan then cook the chicken on low heat until it is almost cooked.

Add capsicum, onion cubes, garam masala, and turmeric powder, and cook for another 2-3 minutes.
